Aa-Lua

Originally introduced to Thailand by the wife of a Portuguese diplomat, this is yet another “traditional” Thai dessert that has been adopted from the Kingdom’s longstanding European ally. It’s made solely with flour, sugar, and coconut cream, and your choice of food colourings, and come in large (Aa-lua Chaao Wang) and small sizes (Aa-lua Jíw).

Longan

Longan /lam-yai/ ลำไย

The longan is a succulent fruit that is fragrant, sweet, extremely juicy, easy to eat, and consistently outranks other varieties in taste tests. The smooth thin leathery brown skin varies from light brown when most fresh, then begins to turn darker brown with age and/or environmental changes. Once the skin has been easily peeled off, the translucent grape-like fruit is exposed. Longans are mostly eaten fresh by themselves and in salads. Refrigerated longans taste very refreshing.

Pumpkin / fúg-tong / ฟักทอง

Thai Pumpkins are large,round winter sguashes with Dark Green or Brown-Gray skins and orange flesh.The variety known as the sugar pumpkin has sweet flesh.

In Thai cooking,it is commonly used in dessert but is  also used in savoury dishes.

Canned pumpkin puree is widely available and can easily be made from fresh pumpkin.

Mango with Sticky rice- Khȃo Nǐaw Má-mûang-ข้าวเหนียวมะม่วง

It’s mango season here in Thailand, and the best way to enjoy them is to pair the sweet fruit with sweet and salty coconut-milk sticky rice. Khȃo Nǐaw Má-mûang is a very popular dessert with both Thais and foreign visitors.

Sticky rice and mango is a marketplace favorite and not to be missed if you visit the country! If you take a trip to Thailand don’t miss this very popular hawker (marketplace) food! The sticky rice is infused with sweetened coconut milk and top with fresh fruit, usually mangoes but also durian fruit is popular though less common.

Pickled fish – Plaa ráa

Plaa ráa is fish that has been fermented with toasted rice and salt  between 15 days and one month. Plaa ráa is primarily made from one of two types of fresh water fish: mudfish (also known as snake head fish or plaa chon) and pla gradee (pictured on the left). The mudfish is larger and has more meat.

Plaa ráa has an unpleasant smell before it is mixed with other ingredients. When preparing Northeastern food outside of the region, some people drop plaa ráa, from the recipe. Thai people say that durian that is overripe has gone “ plaa ráa “. Also, people who swear far too much have a “ plaa ráa ” mouth.

Outside of Thailand, you find plaa ráa sold in glass jars. Until recently, the plaa ráa you’d buy in markets (or make yourself) would still have bones in it so you’d have to strain or pick out the bones, but I have discovered pla rah with no bones. The label on the bottle says, ‘Cream Style’ and is much easier to use! It looks like a thick paste.

Jack Fruit – Fruit from Thailand

                                                      Can pack quite a pong. The aroma is guite musky with a hint of over-ripe bananas. It can be quite over powering in confined places. The flesh is removed in small bright yellow sections about 3 inches long and is very sweet  and the juice tastes a little of banana bubblegum!!!

Green Curry Chicken (Kaeng Kheow Wan Gai)

Green curry chicken (Thai: แกงเขียวหวานไก่, literally sweet green curry) is a variety of curry in  The name “green” curry derives from the color of the dish. Other Thai curry dishes are identified solely by their colors, such as yellow and red curry.

The main ingredients for green curry chicken consist of coconut milk, green curry paste, eggplant, sugar, fish sauce, kaffir lime leaves, and Thai basil leaves. The consistency of its sauce varies with the amount of coconut milk used. Green curry paste is made by pounding in a mortar green chillies, shallots, garlic, galangal, fresh turmeric, shrimp paste and salt. The paste is briefly fried in split coconut cream, then coconut milk, meat or fish, and vegetables added along with a pinch of brown sugar. Finally, kaffir lime leaves, phrik chii faa (“sky-pointing chilies”, large mild chilies) and Thai basil are added just at the end of cooking for fragrance. When the curry is made with fish or seafood, krachai (wild ginger, Chinese keys) is added.

Thai green curry can be made with meat, duck, chicken, fish or vegetables and is usually eaten as an accompaniment to rice or round rice noodles known as khanom jeen (ขนมจีน).

Tom Yum Goong (Lemon Grass Soup)

Tom yum is characterized by its distinct hot and sour flavors, with fragrant herbs generously used. The basic broth is made of stock and fresh ingredients such as lemon grass, kaffir lime leaves, galangal, shallots, lime juice, fish sauce, tamarind, and crushed chili peppers.

In Thailand, tom yum is usually made with prawns (tom yum goong), chicken (tom yum gai), fish (tom yum pla), or mixed sea-food (tom yum talay or tom yum po taek) and mushrooms – usually straw or oyster mushrooms. The soup is often topped with generous sprinkling of fresh chopped coriander (cilantro) leaves.

In Thailand, tom yum is usually made with prawns (tom yum goong), chicken (tom yum gai), fish (tom yum pla), or mixed sea-food (tom yum talay or tom yum po taek) and mushrooms – usually straw or oyster mushrooms. The soup is often topped with generous sprinkling of fresh chopped coriander (cilantro) leaves.

The less popular variety of tom yum is tom yum nam khon (Thai: ต้มยำน้ำข้น), where coconut milk is added to the broth. This is not to be confused with tom kha or tom kha gai - where the galanga flavor dominates the soup. Tom yum nam khon is almost always made with prawns, whereas chicken is often used in tom kha. Its other cousin is less well-known outside Thailand – tom klong. Sometimes Thai chili jam (Nam Prik Pao, Thai: น้ำพริกเผา) is added: this gives the soup a bright orange colour and makes the chili flavor more pronounced.

Commercial tom yum paste is made by crushing all the herb ingredients and stir-frying in oil. Seasoning and other preservative ingredients are then added. The paste is bottled or packaged, and sold around the world. Tom yum flavored with the paste may have different characteristics to that made with fresh herb ingredients.
